Cilantro Corn
3-1/2 cups fresh cut corn or niblet corn ( 2 cans will be plenty)
1 Medium green bell pepper
1 Tablespoon Onion
2 Tablespoons butter
˝ cup fresh cilantro
1-1/2 teaspoon cumin
Sauté all ingredients EXCEPT cilantro and cumin until lightly golden - approx.. 5-8 minutes. Add the cilantro and cumin the last two minutes.
Serve warm.
