HOT CHEESE WAFERS (Janis Carmichael)
2 sticks margarine
1 8-10 oz. package extra sharp cheddar cheese – grated
2 cups self-rising flour
2 cups rice krispies
Cayenne pepper to taste
Dash of Tabasco Sauce
Place 2 sticks margarine in bowl. Grate cheese over margarine – cover with foil and let set overnight.
Sprinkle with cayenne pepper – you need to use at least ¼ tsp. – ½ teaspoon for wafers to have a little heat. I usually keep adding until cheese mixture is red-orange. Cover and let sit for approximately 1 hour.
Add flour – one cup at a time – blending well. Add a dash of Tabasco between cups of flour. This will help keep your dough from getting too stiff. Add both cups rice krispies and stir until blended.
Place ½ tsp. of mixture on cookie sheet and press flat. Bake at 350 degrees for 13-14 minutes. Let cool on cookie sheet for 20 seconds ( long enough for the wafer to release from pan) remove to cooling rack.
Store in air tight container.
