They are attempting to develop immunological, microbiological, and genetic methods for detecting the bacterium Yersinia pestis in food. Yersinia pestis has caused numerous plagues throughout history, including the Black Death. This research is being carried out by the Agricultural Research Service (ARS) of the US Department of Agriculture. Photographed in the USA.
