This cake, Coconut Pineapple Bibingka, is considered a delicacy in the Philippines. A Fine Art America friend who lives there, Ann Supan, recently had a birthday, and asked if I had ever heard of Bibingka? She said she could only get this cake during the Christmas season and she obviously missed it. I researched it and came up with this recipe.
It is a sticky cake, very different from other dryer American cakes, because of the use of glutinous sweet rice flour. It makes the cake have a unique soft, sweet, and gelatinous consistency, sort of like the Japanese Mochi. There are many different versions of Bibingka, depending on what part of the Philippines it came from, for example it is also made with rice, not rice flour. This recipe is a keeper Ann, "the first piece is yours"... Happy Birthday!
