This region of the South of France boasts an average of 300 days of sunshine annually.. This Winter day we had lunch with friends, then took a walk by the Aude River that runs down from the Pyrenees Mountains into the Carcassonne valley, then empties into the Mediterranean, about 80/90 miles from here. Limoux is famous for winter sun and very well-known for it's "Blanquette du Limoux."
Champagne is said to have been created in this area by the monk Dom Perignon.. who later was shipped up to the north to "dry out" from all his 'experimenting!
