Well sir, I hate like anything to admit it, but I'm old enough to remember when this exact kind of thing was brand new, and operating full steam. When I was a kid, there was a little store about a block from us. It was run by an old Polish gentle man, by the name of Pete, who made the best Polish sausage I've eaten before or since. The grocery part of the store was (is) pretty small, and there was a meat counter separating the front from the back. On days that he made sausage, the bigger area behind the meat counter had tables set up all around, and they had broom sticks set up from table to table. There were ropes and ropes of fresh made sausage hanging from them. If you add several Polish gentlemen standing around bs'ing and drinking long-neck Buds, then finally throw in a few million flies, then you get a pretty good picture of what went on. Oh, but the smell of those sausages! The store is still there, and the only difference in it is that folks have added a table or two in the front part for people to have sandwiches and such. After old Pete died, his sons took over, doing things pretty much the same way. Now there is a grand son in-law, and his son run it. Of course they make their sausage to meet today's standards, but they use the old man's recipe to this day. It seems odd to me to go in there and not have the ropes of sausage, the smell of men smoking, the odor of quite a few open boggles of Bud, but the sausage is as good as it ever was, and the smell is enough to put you to your knees with want.
