I love hearts of palm so much that I eat them right out of the can. Hearts of palm are vegetables harvested from the soft core of a palm tree right here in Hawaii. The type of palm tree used are bred specifically for production of hearts of palm. These trees have multiple stems, allowing farmers to harvest the hearts while allowing the rest of the tree to live. The heart of palm is sweet, soft, yet crispy. It is ivory-colored, firm in texture and delicate in flavor. It can be eaten fresh or canned and you can find canned hearts of palm in most grocery stores. This light salad can be served alone or with a small piece of salmon, sauted in garlic butter, garnished with capers. This recipe can be found on my food blog at: www.tastinghawaii.com

Thanks Gina, my mother first introduced me to hearts of palm, in the can, when I was very young, she was a very good cook. When I got to Hawaii many years later, I was able to try them fresh... very different, almost like eating a carrot. I just bought a case on Amazon. Love your work!
