White oyster mushrooms, Pluerotus ostreatus, found growing on dead standing aspen trees in Dufferin Tract, Dufferin County, Ontario on May 27, 2012. These were growing high in the tree and we had to find a long dead stick to dislodge them from the tree and then catch them before they hit the ground. Great to eat. Some were dipped in oily marinate and then smoked on the BBQ, others were stir fried with shrimp and veggies. I think they look great against Tyler's black shirt. I designate these as white oysters, to distinguish them against the liliac-grey colored ones that I tend to find on maples in the fall, which I think are Pleurotus sapideus.
