As cities grew and became more congested with people and animals in Medieval Europe, many sources of water became very polluted. This fact greatly increased the spread of diseases which often were fatal. Wine simply became much safer to drink and it tasted much better. Today, wine is so embedded in the culture of many countries that it's significance cannot be denied.
