Dried commercial yeast pellet. Coloured scanning electron micrograph (SEM) of a dried pellet of baker's yeast (Saccharomyces cerevisiae). Yeast is a fungus and consists of single vegetative cells. S. cerevisiae ferments sugar, producing alcohol and carbon dioxide in the process. It is used in the production of beer, wine and bread. Magnification x150 when printed 10 centimetres wide.
