Sweet potato root. Light micrograph of a transverse section through a sweet potato (Ipomoea batatas) root. At centre are xylem cells (red), which transport water around the plant. These are surrounded by cambium cells (blue). The next layer consists of parenchyma cells and starch grains (pink), a store of energy. The outer layer is cork cambium (brown). Magnification: x14 when printed at 10 centimetres wide.
